Crystallized Honey:

If you have encountered honey that has turned hard, this is not surgar, it has crystallized. When raw honey gets below a certain temperature for to long it will begin to take on its natural form; solidifying. This process can also happen when it has been placed in a cabinet; I noticed this myself. The best place to store raw honey is on a counter where it has access to light.

How to de-crystallize your honey:
Simpy bring a pot of water to boil, turn it back to medium, loosen the lid on the jar and place it in the water. De-crystallizing it completly can take a while depending if the jar is solid. I wouldn't advise doing this with a plastic container.
